  • 2 cups cooked white rice Day-old preferred for best texture.
  • 1 tablespoon vegetable oil Essential for crispy finish.
  • 1 cup chicken adobo, shredded Adds rich flavor.
  • 2 cloves garlic, minced Enhances aroma and taste.
  • 2 tablespoons soy sauce Key ingredient for umami flavor.
  • 1 teaspoon ground black pepper Use to taste.
  • 2 stalks green onions, chopped For garnish.

Preparation

  • Cook your white rice a day ahead and allow it to cool in the refrigerator.
  • In a large skillet or wok, heat the vegetable oil over medium heat.
  • Add the minced garlic and stir-fry for about 30 seconds until fragrant but not burnt.
  • Introduce the cold, cooked rice to the skillet, breaking apart any clumps gently. Stir-fry for about 3-5 minutes.
  • Gently fold in the shredded chicken adobo until well mixed.
  • Pour in the soy sauce and dust with ground black pepper. Stir-fry for another couple of minutes.
  • Remove the skillet from heat and transfer the mixture to a serving dish. Top with chopped green onions.

Notes

Using day-old rice prevents sticking. Customize with any leftover adobo or add veggies like peas or bell peppers for nutrition.
