  • 12 ounce milk chocolate (melted) Creates a luscious, velvety coating over the toffee.

For the nuts

  • 1 cup whole unblanched almonds Provides a crunchy contrast and nutty flavor.
  • 1 cup finely ground walnuts Adds depth and complexity to the texture.

Instructions
 

Preparation

  • Prepare a baking sheet by lining it with parchment paper.
  • In a heavy-bottomed saucepan, combine the unsalted butter, margarine, granulated sugar, and kosher salt. Heat over medium heat, stirring constantly until melted and sugar is dissolved.
  • Once it reaches a gentle boil, reduce the heat to medium-low. Stir regularly for 10-15 minutes, until it turns a rich amber color.
  • Remove from heat and stir in the vanilla extract. The mixture will bubble slightly.
  • Fold in the almonds and finely ground walnuts, ensuring they are evenly coated.
  • Pour the mixture onto the prepared baking sheet and spread it evenly.
  • Allow to cool for about 5 minutes before pouring the melted milk chocolate over the top.
  • Optional: Sprinkle additional chopped almonds on top of the chocolate before it sets.
  • Let it cool completely at room temperature or refrigerate to speed up the hardening process.
  • Once set, break the toffee into pieces and serve.

Notes

Consider adding a pinch of sea salt on top of the chocolate for a sweet-and-salty flavor contrast. Use a heavy-bottomed saucepan to minimize the risk of burning. For flavor variations, try adding espresso powder to the chocolate layer.
