Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is translucent, about 7-10 minutes. Season with salt, pepper, and garlic powder.
  • Peel and dice the potatoes into uniform pieces.
  • In a large mixing bowl, mix the cooked beef and onion with the diced potatoes, drained corn, sour cream, milk, melted butter, and paprika until well combined.
  • Transfer the mixture to a greased 9×13-inch baking dish and spread it evenly.
  • Sprinkle the shredded cheddar cheese over the top.
  • Cover with aluminum foil and bake for 30 minutes, then remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden brown.
  • Let the casserole sit for a few minutes, then garnish with fresh parsley before serving.

Notes

For a healthier option, use lean ground turkey and substitute Greek yogurt for sour cream. Feel free to add your favorite vegetables like peas or bell peppers, and experiment with different cheeses.
