Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat a splash of olive oil over medium heat. Add chicken pieces, seasoning lightly with salt and pepper. Cook for about 5-7 minutes, or until fully cooked and no longer pink. Remove from heat.
  • In a mixing bowl, combine cooked chicken, marinated artichokes, thawed spinach, ricotta cheese, and half of the grated Parmesan cheese. Stir gently until well incorporated.
  • In a 9x13-inch baking dish, spread a thin layer of Alfredo sauce at the bottom. Layer three lasagna noodles on top, add half of the chicken and artichoke mixture, another layer of Alfredo sauce, and repeat.
  • For the final layer, place the last three lasagna noodles and spread the remaining Alfredo sauce generously over them. Sprinkle remaining Parmesan cheese on top.
  • Cover the dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes until bubbly and golden.
  • Let it rest for about 10 minutes before slicing.

Notes

For added flavor, consider sautéing garlic and onion before adding the chicken. Drizzle olive oil before baking for a crispy top. Fresh herbs can be added to the filling for an aromatic touch.
