For the Batter

  • 1 cup flour This ingredient forms the crispy batter.
  • 1 cup beer The carbonation helps create a light, airy texture in the batter.

For Assembly

  • 8 pieces corn tortillas Warmed to cradle the delicious fillings.
  • 2 cups shredded cabbage Provides a crisp, refreshing contrast.
  • 0.5 cup sour cream Adds richness and balances flavors.
  • 2 tablespoons lime juice Freshly squeezed for bright flavor.

Preparation

  • Pat the white fish strips dry with paper towels to ensure the batter adheres well. Season them lightly with salt and cayenne pepper if using.
  • In a large mixing bowl, combine the flour and a pinch of salt. Gradually whisk in the beer until the batter is smooth and slightly thick, resembling pancake batter consistency.
  • In a deep skillet or pot, heat about 2 inches of oil over medium-high heat until it’s hot but not smoking. You can test the oil by dropping a small amount of batter into it; it should sizzle immediately.
  • Dip each fish strip into the batter, ensuring it’s fully coated. Let any excess batter drip off before frying.

Cooking

  • Carefully place the battered fish strips into the hot oil, a few at a time. Fry for about 3-4 minutes on each side until golden brown and crispy. Remove from oil and drain on paper towels.
  • While the fish is frying, warm the corn tortillas on a skillet or directly over an open flame for about 30 seconds on each side until soft and pliable.

Assembly

  • Layer the warm tortilla with a generous amount of fried fish, followed by a handful of shredded cabbage. Drizzle sour cream and freshly squeezed lime juice over the top.
  • Serve immediately for the best experience, with additional lime wedges on the side.

Notes

For added flavor, consider adding spices to the flour like garlic powder or smoked paprika. Maintain oil temperature for perfect frying—too cool can soggy fish and too hot can burn the batter. Substituting beer with fizzy water works well.
