Cheese Sauce Base

  • 2 cups sharp cheddar cheese Freshly grated

Preparation

  • Preheat your oven to 375°F (190°C) and grease a 2-quart baking dish.
  • Cook the elbow macaroni according to package directions until al dente. Drain well and set aside.
  • In a large pot over medium heat, melt the butter. Whisk in the flour to create a roux, cooking for about a minute until lightly golden.
  • Gradually whisk in the evaporated milk and whole milk, stirring continuously until smooth. Cook for 5-8 minutes to thicken.
  • Remove the pot from heat, then stir in seasoned salt, garlic powder, and black pepper. Add in 3 cups of the shredded cheese and stir until melted.
  • Temper the eggs by slowly whisking in a small amount of the hot cheese sauce into the beaten eggs. Pour this mixture back into the pot and whisk to incorporate.
  • Add the cooked elbow macaroni to the cheese sauce, stirring gently until combined.
  • Pour half of the mac and cheese mixture into the prepared baking dish and sprinkle with half of the remaining cheese. Top with the rest of the macaroni and the remaining cheese.

Baking

  • Bake for 20-25 minutes or until bubbling and golden brown. Let rest for 10 minutes before serving.

Notes

Remember to cook the macaroni only until al dente as it will continue to bake in the oven. For maximum freshness, grate your cheese right before using. Don’t rush the sauce-making process to develop flavor.
