Preparation

  • Preheat your oven to 400°F (200°C) to ensure even baking.
  • In a large bowl, combine orange juice, soy sauce, honey, rice vinegar, grated ginger, and minced garlic. Stir well and add chicken thighs, tossing to coat. Cover and marinate for at least 30 minutes or up to 2 hours in the refrigerator.
  • Lightly grease a 9x13-inch baking dish with non-stick spray or olive oil.
  • Transfer chicken to the baking dish, arranging it evenly. Pour remaining marinade over the chicken.
  • Bake for 25-30 minutes, or until the chicken reaches 165°F (75°C). Baste midway with pan juices for moisture.
  • If desired, whisk cornstarch with cold water in a small bowl to create a slurry. Pour slurry into the baking dish after baking, then return to oven for 5-10 minutes until sauce thickens.
  • Let rest for a few minutes before serving hot over rice or noodles.

Notes

For extra flavor, consider adding orange zest to the marinade. A sprinkling of sesame seeds before serving adds crunch and elegance.
