Chicken

  • 2 lbs boneless, skinless chicken thighs (or breasts) This choice provides a juicy and tender base.

Garnish

  • 1 Tbsp chopped fresh parsley (optional) For a pop of color and freshness when serving.

Instructions
 

Preparation

  • Gather all your vibrant ingredients.
  • In a medium bowl, combine balsamic vinegar, olive oil, minced garlic, rosemary, thyme, Dijon mustard, salt, and pepper. Whisk until well blended.
  • In a large resealable plastic bag or shallow dish, place the chicken thighs. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes, preferably up to 2 hours.

Cooking

  • Preheat the grill or oven to 400°F (200°C). If grilling, prepare for medium-high heat.
  • Remove chicken from the marinade and discard the remaining marinade.
  • Place chicken on the grill or a baking sheet if using an oven. Grill for about 6-7 minutes per side, flipping once, or bake for about 25-30 minutes until the internal temperature reaches 165°F (75°C).
  • Let the chicken rest for about 5 minutes before serving.

Serving

  • Serve the balsamic chicken on a platter, garnished with fresh parsley.

Notes

For a smoky flavor, consider adding liquid smoke to your marinade. If you prefer a sweeter note, add a tablespoon of honey or maple syrup. Always taste your marinade before applying.
