Instructions

Preparation

  • Begin by placing the chicken pieces in a bowl and pouring the buttermilk over them. Stir to coat well, then let it marinate for at least 15 minutes.
  • In a separate bowl, whisk together the cornstarch, all-purpose flour, garlic powder, smoked paprika, salt, and pepper.
  • In a deep skillet or frying pan, heat about an inch of vegetable oil over medium-high heat until it reaches 350°F (175°C).
  • Once the chicken has marinated, remove each piece from the buttermilk, allowing the excess to drip off. Dredge the chicken pieces into the flour mixture, thoroughly coating each piece.

Cooking

  • Carefully place the coated chicken pieces in the hot oil, cooking in batches if necessary to avoid overcrowding. Fry for about 4-5 minutes on each side or until they are golden brown and cooked through.
  • In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar. Mix well until creamy and set aside.

Assembly

  • In a serving bowl, layer the cooked rice as the base.
  • Top it with the fresh mixed greens, sliced cucumbers, and julienned carrots.
  • Finally, add the crispy fried chicken pieces on top.
  • Generously drizzle the Bang Bang sauce over the assembled bowl.
  • Sprinkle fresh cilantro over the top and serve with lime wedges on the side.
