For the Chicken

  • 2 pieces chicken breasts or boneless thighs, cut into bite-sized pieces
  • 0.5 cup buttermilk adds a rich creaminess to the chicken
  • 0.5 cup cornstarch for the crispy coating
  • 0.5 cup all-purpose flour to enhance crunchiness
  • 0.5 tsp garlic powder contributes savory aroma
  • 0.5 tsp smoked paprika infuses a subtle smokiness

For the Sauce

  • 0.25 cup mayonnaise creates a silky-smooth sauce
  • 1.5 tbsp sweet chili sauce provides a hint of sweetness
  • 1 tbsp sriracha adds a kick of heat
  • 1 tsp honey balances flavors with sweetness
  • 1 tsp rice vinegar for a tangy finish

For Assembly

  • 1 cup cooked jasmine or brown rice serving as the wholesome base
  • 1 cup shredded mixed greens for freshness and crunch
  • 0.5 cup cucumber, thinly sliced for a refreshing bite
  • 1 carrot, julienned or ribboned for vibrant color
  • fresh cilantro, chopped to garnish and enhance aroma
  • lime wedges for garnish, adding a zesty twist

Instructions
 

Preparation

  • Place the cut chicken into a bowl and pour in the buttermilk. Let it soak for at least 15 minutes.
  • In another bowl, whisk together the cornstarch, flour, garlic powder, smoked paprika, salt, and pepper.

Cooking

  • Remove the chicken from the buttermilk, allowing excess liquid to drip off. Dredge the pieces in the flour mixture.
  • Heat vegetable oil in a large frying pan over medium-high heat.
  • Add the coated chicken pieces to the hot oil and fry for about 4-5 minutes on each side or until golden brown and cooked through.
  • While the chicken is frying, combine the mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar in a bowl. Stir until smooth.

Assembly

  • Place a scoop of rice in each serving bowl and top with the crispy chicken, then add shredded mixed greens, cucumber slices, and julienned carrots.
  • Drizzle the sauce over each bowl and garnish with fresh cilantro and a lime wedge.

Notes

To ensure crispy chicken, do not overcrowd the pan and monitor oil temperature. You can bake the chicken for a healthier version, and the dish can easily be made gluten-free with appropriate substitutions.
