Ingredients
  

Sauce

  • 1/2 cup mayonnaise Opt for high-quality, such as Kewpie.
  • 1/4 cup sweet chili sauce Imparts sweetness and a hint of heat.
  • 1-2 tsp sriracha Adjust to preferred spice level.

Main Ingredients

  • 1 lb chicken breast or shrimp Use peeled and deveined shrimp or bite-sized pieces of chicken.
  • 1 tbsp sesame oil Infuses a nutty aroma.
  • 1/2 cup yellow onion Finely diced for sweetness.
  • 2 cloves garlic Minced for aromatic punch.
  • 1 tsp fresh ginger Minced, for a fresh note.
  • 2 large eggs Lightly beaten for richness.
  • 3 cups cooked and chilled day-old rice Jasmine or long-grain white rice.
  • 1 cup frozen peas and carrots Adds color and sweetness.
  • 3 tbsp low-sodium soy sauce Enhances umami flavor.
  • 2 green onions thinly sliced For garnish.

Instructions
 

Preparation

  • In a small bowl, whisk together the mayonnaise, sweet chili sauce, and sriracha until smooth. Set aside.
  • Heat sesame oil in a large skillet or wok over medium-high heat.
  • Season chicken or shrimp with salt and pepper, add to skillet, and cook until just cooked through: 3-4 minutes for shrimp, 5-7 minutes for chicken. Remove from skillet and set aside.
  • Add diced onion to the skillet and cook for 2-3 minutes until softened.
  • Add minced garlic and ginger; cook for an additional 30 seconds until fragrant.
  • Push veggies to side of the skillet, pour beaten eggs on the empty side, and scramble until just set.

Cooking

  • Add chilled rice and frozen peas and carrots to the skillet.
  • Drizzle with soy sauce and stir-fry everything together for about 3-4 minutes, breaking up clumps of rice.
  • Return cooked protein to the skillet, drizzle with half of the bang bang sauce, toss to coat, and serve hot, garnished with sliced green onions and remaining sauce on the side.

Notes

Use day-old rice for the best texture and avoid overcrowding the pan when cooking. Prep ingredients ahead for smoother cooking.
