Ingredients
  

For the Rice

Instructions
 

Cooking the Rice

  • Rinse 1 cup of Jasmine rice under cold water to remove excess starch. In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring it to a boil over medium heat.
  • Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes or until all the water is absorbed. Remove from heat and let it stand for 5 minutes before fluffing with a fork.

Preparing the Ground Turkey Filling

  • In a large skillet, heat 1 tablespoon of sesame oil over medium-high heat. Add 2 cloves of freshly minced garlic and sauté for about 30 seconds until fragrant.
  • Add 1 pound of ground turkey, breaking it apart with a spatula. Cook until the turkey browns and is fully cooked, approximately 5-7 minutes.

Adding the Vegetables

  • Dice the 2 cups of bell peppers into bite-sized pieces. Once the turkey is browned, add the bell peppers to the skillet.
  • Cook for an additional 3-4 minutes until the peppers are softened but still slightly crisp.

Creating the Sauce

  • To the turkey and pepper mixture, add 3 tablespoons of low-sodium soy sauce and 2 tablespoons of Sriracha. Stir well to combine all the ingredients.
  • Let them simmer together for another 2-3 minutes until thick and sticky.

Assembling the Bowls

  • Scoop a generous portion of the fluffy Jasmine rice into each bowl. Top with a hearty serving of the spicy turkey filling.
  • Add a dollop of sour cream or Greek yogurt on top and garnish with freshly sliced green onions.
