  • 0.5 cup tapioca flour Adds chewiness to the rolls.

For the filling

Preparation

  • In a mixing bowl, combine the rice flour, tapioca flour, salt, and lukewarm water. Whisk until smooth.
  • Fill a steamer pot with water and bring to a boil. Prepare a flat plate or lightly oiled steaming tray.

Cooking

  • Ladle a small amount of batter onto the steamer tray, tilting it to spread evenly.
  • Steam the crepe for 3-4 minutes until translucent and fully cooked.
  • Carefully lift the steamed crepe, place on a cutting board, and fill with your chosen ingredients.
  • Fold both sides to encase the filling and form a roll.
  • Repeat with remaining batter, adjusting heat as necessary.

Serving

  • Serve the Banh Cuon immediately with fried shallots, fresh herbs, and a dipping sauce.

Notes

Consider customizing fillings with shredded chicken, shrimp, or grated vegetables. Store leftovers in an airtight container for up to three days. Reheat gently by steaming.
