  • 3 large large eggs, separated into yolks and whites For that fluffy rise.
  • 1/2 cup full-fat cottage cheese Creamy and rich.
  • 1/2 teaspoon cream of tartar Can substitute with lemon juice.
  • 1 tablespoon maple syrup or honey Optional for sweetness.
  • 1/2 cup blueberries Fresh or thawed from frozen.
  • 1 splash vanilla extract For sweet aroma.
  • 1 each lemon zest Adds brightness.
  • a pinch sea salt Enhances flavor.

Instructions
 

Preparation

  • Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • Carefully separate the eggs, placing the yolks in one bowl and the whites in another.
  • Whip the egg whites with the cream of tartar using an electric mixer until stiff peaks form.
  • In another bowl, blend the yolks, cottage cheese, and optional sweetener until smooth.
  • Gently fold the whipped egg whites into the yolk mixture until combined.
  • Fold in the blueberries gently, or sprinkle them on top of the mounds.
  • Scoop the mixture in mounds onto the baking sheet and bake for 25 to 30 minutes or until golden.

Notes

Ensure bowls and beaters are clean and dry for whipping egg whites. Experiment with different berries or flavorings for variety.
