For the Salad

For the Dressing

Preparation

  • In a medium skillet over medium heat, add 1 tablespoon of vegetable or avocado oil. Once hot, crumble the tempeh into the pan. Sauté for about 5 minutes, allowing it to brown lightly and absorb the flavors.
  • Stir in 2 tablespoons of adobo sauce, 1 tablespoon chili powder, 1 teaspoon ground cumin, and 1 teaspoon kosher salt. Allow the mixture to sauté for an additional 3-4 minutes, letting the spices coat the tempeh evenly. Remove from heat and set aside.
  • Heat the cooked pinto beans and frozen fire-roasted corn in a separate saucepan. Stir occasionally until warmed through (about 5-7 minutes). Remove from heat.
  • In a small bowl, whisk together 2 tablespoons of fresh lime juice with more adobo sauce, if desired, for an extra kick. Set aside.

Assembly

  • In a large bowl, combine the chopped romaine hearts, shredded red cabbage, halved cherry tomatoes, and chopped fresh cilantro. Toss gently to mix.
  • Add the sautéed tempeh, warmed pinto beans, and corn to the salad mixture. Drizzle the lime dressing over the top and toss again to combine all the elements.
  • Gently lay the sliced avocado atop the salad for a creamy finish.
  • Serve immediately to enjoy the salad’s freshness, or refrigerate for a bit if you want it chilled.

Notes

Make Ahead: Chop vegetables and prepare the dressing in advance to save time when assembling the salad. Extra Heat: If you’d like an additional kick, add diced jalapeños or sprinkle some red pepper flakes.
