Instructions
 

Marination

  • Place the chicken thighs in a large mixing bowl and pour the buttermilk over them, ensuring they are well-coated.
  • Mix in the hot sauce, if desired. Cover with plastic wrap and refrigerate for at least 2 hours, preferably overnight.

Coating Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a separate bowl, mix the flour, paprika, garlic powder, onion powder, dried thyme, salt, and black pepper.
  • Remove the chicken from the buttermilk, shake off excess liquid, and dredge each piece in the flour mixture, ensuring thorough coating.
  • Place the coated chicken thighs on the prepared baking sheet.

Baking

  • Drizzle the tops of the coated chicken thighs with olive oil.
  • Bake in the preheated oven for 35-45 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the coating is golden brown.
  • Monitor during the last ten minutes to achieve desired crispiness.

Serving

  • Remove the chicken from the oven and let it rest for a few minutes before serving.

Notes

For extra crunch, add panko breadcrumbs to the flour mixture. Marinating overnight deepens flavor and tenderness. Experiment with different herbs and spices for custom flavors.
