Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the sugar and salted butter until light and fluffy (3-4 minutes).
  • Gradually mix in the evaporated milk until well blended.
  • Add the butterscotch chips and incorporate them gently.
  • In a separate bowl, combine the old-fashioned oats and shredded sweetened coconut.
  • Stir in the oat and coconut mixture into the wet ingredients until combined.
  • Drop spoonfuls of the dough onto a greased baking sheet, spacing them about two inches apart.
  • Bake for 10-12 minutes or until edges are lightly golden.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes
