Ingredients
  

For the beans

  • 1 lb Camellia red beans (soaked overnight) The star of the dish, offering a creamy texture and nutty flavor.
  • 1 teaspoon salt Enhances the flavors of the other ingredients.
  • 1 teaspoon black pepper Adds warmth and depth.

For the rice

  • 1 cup long-grain white rice Serves as the ideal base to soak up the rich flavors.

For sautéing

  • 1 tablespoon olive oil Lends richness and a medium for sautéing.
  • 1 large onion (chopped) Provides sweetness and depth.
  • 3 cloves garlic (minced) Adds robust flavor.

Instructions
 

Preparation

  • Soak the beans overnight in a large bowl to soften.
  • The next day, drain and rinse the beans under cool running water.
  • In a large pot, heat olive oil over medium heat. Sauté chopped onion until soft, about 5 minutes.
  • Add minced garlic and cook for an additional minute.
  • Stir in the soaked beans, ensuring they are well coated with oil.
  • Pour in enough water to cover the beans by about two inches, add salt and black pepper, then bring to a boil.
  • Once boiling, reduce heat to low, cover, and let simmer for 1.5 to 2 hours, or until tender.

Cooking the Rice

  • Cook the long-grain white rice according to package instructions, typically for 15-20 minutes.

Serving

  • Serve beans over a scoop of rice, ladling some broth over the top.
  • (Optional) Garnish with chopped green onions or fresh parsley.

Notes

To elevate the dish, add Cajun seasoning or diced bell peppers when sautéing. Leftovers can be stored for up to three days in an airtight container or frozen in portions. Reheat with a splash of water or broth.
