  • 1 can (14.5 oz) diced tomatoes Adds moisture and acidity.
  • 1 cup frozen corn Adds sweetness and vibrant color.
  • 1 cup shredded cheddar cheese Melts beautifully for a creamy finish.
  • 2 cups cooked and drained pasta shells Holds all the flavors together.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, add the ground beef and cook until browned, about 5 to 7 minutes. Drain excess fat.
  • Add the diced onions and minced garlic, sauté for about 3-4 minutes until onions are translucent.
  • Pour in the diced tomatoes (including juice) and frozen corn. Stir and let it simmer for about 5 minutes.
  • In a large mixing bowl, combine the cooked pasta shells with the beef and vegetable mixture. Fold in half of the cheddar cheese.
  • Transfer the mixture to a greased casserole dish and spread it out evenly.
  • Sprinkle the remaining cheddar cheese on top.
  • Bake in the preheated oven for about 25 to 30 minutes until the cheese is bubbly and golden brown.
  • Let it rest for about 5-10 minutes before serving.

Notes

Consider adding a pinch of red pepper flakes for heat, and customize with your favorite vegetables for more flavor.
