Preparation

  • In a large pot, combine the chicken stock, onion, and celery. Bring to a gentle boil.
  • Once boiling, gently add the chicken breasts and simmer for 20-25 minutes until cooked through.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually mix in the buttermilk until a soft dough forms.
  • Remove the chicken from the pot, shred it and return to the broth.
  • Drop spoonfuls of dumpling dough into the simmering broth without crowding.
  • Cover the pot and cook the dumplings for about 15 minutes.
  • After 15 minutes, check the dumplings, stir gently, and serve hot.

Notes

For best results, use low sodium stock and avoid overworking the dumpling dough. Optionally, add herbs like thyme or rosemary to the broth for added flavor.
