Aromatics

  • 1 tablespoon olive oil
  • 1 medium onion (diced)
  • 1 medium poblano pepper (seeds removed and diced)
  • 4 cloves garlic (minced)

  • 2 pounds boneless skinless chicken breasts
  • 2 cups chicken broth
  • 2 cans Great Northern beans (drained and rinsed)
  • 1 cup frozen corn kernels
  • 1 can (8 ounces) diced Hatch green chilis depending on your heat preference

Spices

  • 3 teaspoons cumin
  • 2 teaspoons oregano
  • 0.5 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 2 teaspoons salt

Preparation Steps

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and poblano pepper, stirring occasionally until they soften and the onion turns translucent, about 5-7 minutes.
  • Stir in the minced garlic, cumin, oregano, smoked paprika, and garlic powder. Cook for another minute until the garlic becomes fragrant.
  • Add the boneless skinless chicken breasts to the pot and pour in the chicken broth. Bring the mixture to a gentle boil, then reduce the heat to low, cover, and let it simmer for about 20-25 minutes, or until the chicken is cooked through.
  • Once cooked, remove the chicken from the pot and use two forks to shred it into bite-sized pieces. Return the shredded chicken back into the pot.
  • Add the rinsed Great Northern beans, frozen corn, and diced Hatch green chilis to the pot. Stir everything together and let it simmer for an additional 15-20 minutes.
  • Stir in the cream to give the chili its luxurious, creamy texture. Adjust the seasoning with salt and pepper as needed, letting it simmer for another 5 minutes.
  • Ladle the chicken chili into bowls and add your favorite toppings.

Notes

For added depth, consider using smoked chicken instead of plain chicken breasts, or mashing some beans for a thicker chili. Adjust spice levels according to preference and enjoy with warm crusty bread or cornbread.
