Enchiladas assembly

  • 8 count flour tortillas Soft and pliable for easy rolling.
  • 2 small cans red enchilada sauce Bright and tangy.
  • 4 oz cheddar cheese, shredded Divided for perfect melting.
  • 4 oz Monterey Jack cheese, shredded Divided for balance.
  • 1 bunch fresh cilantro For garnish, adding a pop of color and freshness.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine shredded chicken, black beans, corn, diced tomatoes with green chiles, cumin, garlic powder, and onion powder. Mix well.

Assembling the enchiladas

  • Take a flour tortilla and spoon about 1/3 cup of the chicken mixture into the center. Sprinkle some cheddar and Monterey Jack cheese on top, then gently roll the tortilla.
  • Place the rolled enchilada seam-side down in a greased baking dish. Repeat with remaining tortillas and filling.
  • Pour red enchilada sauce evenly over the top of the enchiladas.
  • Sprinkle remaining cheese evenly over the top.

Baking

  • Cover the dish with foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10 minutes.

Serving

  • Let cool for a few minutes, then garnish with chopped cilantro and serve warm.

Notes

For extra creaminess, consider adding a layer of sour cream to the filling. You can add diced jalapeños or chili powder for heat. These enchiladas pair well with a crisp green salad or Mexican rice. Serve alongside guacamole and tortilla chips for gatherings.
