  • 10 pieces flour tortillas (6-inch size) Soft, fluffy tortillas that cradle the delicious filling.

Preparation

  • Preheat your oven to 350°F (175°C) to ensure that your enchiladas will cook evenly.
  • In a large mixing bowl, combine the shredded chicken with half of the enchilada sauce, chili powder, cumin, and garlic powder. Mix well.
  • Take a flour tortilla and place a generous scoop of the chicken mixture on one end. Roll the tortilla tightly around the filling and place it seam-side down in a greased baking dish. Repeat with remaining tortillas.
  • Pour the remaining enchilada sauce evenly over the top of all enchiladas and sprinkle with shredded cheddar cheese.
  • Bake for about 20-25 minutes, or until the cheese is melted and bubbly, and the edges are lightly golden.
  • Remove from the oven and let cool for a few minutes before serving.

Notes

For extra flavor, consider adding chopped green onions or cilantro as a garnish. You can also substitute the chicken with ground turkey or beef.
