  • 24 oz Canned crushed tomatoes The base of the sauce.
  • 0.5 cup Chicken broth Adds richness and moisture.
  • 8 oz Fresh mozzarella cheese Sliced to melt beautifully.
  • 0.25 cup Fresh basil Chopped for garnish.

Preparation

  • Begin by cutting the boneless, skinless chicken breasts into 1-inch cubes.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  • Sprinkle the diced chicken with 1 teaspoon of garlic powder and 0.5 teaspoon of Italian seasoning. Toss to coat.
  • Add the seasoned chicken to the hot skillet and sear for about 5-6 minutes until golden brown and cooked through.
  • Pour in 24 oz of canned crushed tomatoes and stir well, scraping up any flavorful brown bits.
  • Add 0.5 cup of chicken broth, mixing thoroughly with the crushed tomatoes.
  • Allow the mixture to simmer for about 10 minutes on low heat.
  • Remove the skillet from heat and place sliced mozzarella on top. Cover and let sit for a few minutes until the cheese melts.
  • Garnish with chopped fresh basil and serve immediately.

Notes

For deeper flavor, marinate chicken in garlic powder and Italian seasoning for 30 minutes. Consider adding red pepper flakes for heat. Shrimp or zucchini can be substituted for chicken.
