  • 1/2 cup Soy sauce For marinating.
  • 2 tablespoons Vinegar Adds tanginess.
  • 2 tablespoons Mirin For sweetness.
  • 1/2 cup Flour For coating.
  • 2 large Eggs Beaten, for binding.
  • 1 cup Breadcrumbs For crispy texture.
  • Oil for frying Oil Use a neutral oil.

Glaze

  • 1/4 cup Soy sauce For the glaze.
  • 2 tablespoons Vinegar For tanginess.
  • 2 tablespoons Sugar To balance flavors.
  • 2 tablespoons Lemon juice Adds brightness.

Instructions
 

Preparation

  • Marinate the chicken thighs in a mixture of soy sauce, vinegar, and mirin for about 30 minutes.
  • Prepare your breading station by coating each marinated thigh in flour, dipping it in beaten eggs, and rolling it in breadcrumbs.

Cooking

  • Heat oil in a skillet over medium heat and fry the coated chicken until golden brown, about 5-6 minutes per side.
  • In a separate pan, combine soy sauce, vinegar, sugar, and lemon juice for the glaze and simmer until slightly thickened.
  • Toss the fried chicken in the prepared glaze until well coated.

Notes

For additional flavor, you can sprinkle sesame seeds or chopped green onions on top. Consider substituting with gluten-free soy sauce for a gluten-free version.
