For the Biscuit Topping

  • 2 cups All-purpose flour Base for the biscuits.

Instructions
 

Preparation

  • In a large pot, melt the butter over medium heat. Add the chicken pieces and sauté until golden brown and fully cooked, about 6-7 minutes. Remove the chicken and set aside.
  • In the same pot, add onions, carrots, and celery. Cook for about 5 minutes until softened and fragrant.
  • Sprinkle the flour over the sautéed vegetables and stir well to combine, cooking for an additional 2 minutes to remove the raw flour taste.
  • Gradually pour in the chicken broth and heavy cream, stirring continuously until the mixture thickens.
  • Add the cooked chicken, frozen peas, dried thyme, salt, and black pepper, and stir until well combined and heated through.

Biscuit Preparation

  • In a large bowl, combine 2 cups of flour, baking powder, and salt. Cut in cold butter until the mixture resembles coarse crumbs.
  • Stir in milk until just combined.

Assembly and Baking

  • Preheat your oven to 425°F (220°C). Pour the chicken filling into a baking dish.
  • Using a spoon or a cookie scoop, drop spoonfuls of biscuit dough evenly over the top of the filling.
  • Place the baking dish in the oven and bake for 25-30 minutes or until the biscuits are golden brown and cooked through.

Notes

For a richer flavor, consider marinating the chicken in herbs. You can add more vegetables like potatoes or corn for a heartier filling. Using store-bought rotisserie chicken can save time.
