Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large pot, melt 2 tablespoons of butter over medium heat. Add the boneless chicken breasts and cook until no longer pink in the center, about 5-7 minutes. Remove from heat, let cool slightly, then dice.
  • In the same pot, add the remaining butter. Once melted, add chopped onion, diced carrots, and celery. Sauté until softened, about 5 minutes. Stir in frozen peas, fresh thyme, and rosemary.
  • Pour in chicken broth and bring to a simmer, allowing the mixture to thicken slightly. Stir in heavy cream and season with salt and pepper.
  • Add diced chicken back into the pot and mix thoroughly.
  • On a lightly floured surface, roll out puff pastry to fit your baking dish.
  • Pour chicken and vegetable filling into a suitable baking dish, cover with rolled-out puff pastry, trim and crimp the edges to seal, and cut a few slits in the top.
  • Bake in the preheated oven for about 25-30 minutes, until pastry is golden brown and puffed.
  • Let cool for a few minutes before serving to help the filling set slightly.

Notes

For extra depth, consider roasting the chicken instead of boiling. A rotisserie chicken is a great shortcut. Add more vegetables like mushrooms or green beans for variety. Brush the pastry with egg wash for a shinier finish.
