  • 2 tablespoons Soy sauce Umami-rich for flavor.
  • 1 tablespoon Sesame oil Adds depth of flavor.
  • 1 tablespoon Cornstarch For coating chicken.
  • 1 teaspoon Ginger (grated) Adds a zesty kick.
  • 1 clove Garlic (minced) Enhances flavor.

Preparation

  • Start by cutting the boneless, skinless chicken breasts into bite-sized pieces, and toss in a bowl with cornstarch.
  • In a large pot, bring water to boil, add the ramen noodles, and cook according to package instructions. Drain and set aside.

Cooking

  • In a large skillet or wok, heat the sesame oil over medium-high heat. Once hot, add the chicken and cook for about 4-5 minutes until golden brown.
  • Add the thawed mixed vegetables to the skillet and stir-fry for an additional 2-3 minutes.
  • Add minced garlic and grated ginger to the pan and stir-fry for another minute until fragrant.
  • Gently add the cooked ramen noodles and soy sauce to the skillet, mixing thoroughly.
  • Stir-fry everything together for another 2-3 minutes. Adjust seasoning with more soy sauce if necessary.
  • Remove from heat and serve, garnished with sliced green onions or sesame seeds.

Notes

Consider marinating the chicken in soy sauce and ginger for 30 minutes before cooking for enhanced flavor. You can also add red pepper flakes or sriracha for extra heat.
