  • 1 lb pre-cooked chicken sausage (such as Italian or apple chicken sausage, sliced into 1/2-inch rounds)
  • 1 lb baby potatoes (halved or quartered, golden and tender)
  • 1 large head broccoli (cut into bright green florets)
  • 2 pieces bell peppers (any color, chopped into juicy chunks)
  • 1 piece red onion (cut into wedges that caramelize beautifully)

Seasoning and Oil

  • 3 tbsp olive oil (rich and aromatic)
  • 2 tsp Italian seasoning (fragrant and herby)
  • 1 tsp garlic powder (pungent and flavorful)
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper (or to taste)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper to prevent sticking.
  • In a large bowl, combine the baby potatoes, broccoli, bell peppers, and red onion. Drizzle with olive oil, sprinkle Italian seasoning, garlic powder, salt, and black pepper. Toss well to coat.

Roasting

  • Spread the seasoned vegetables in a single layer on the prepared baking sheet. Roast the veggies for 15 minutes.
  • After 15 minutes, add the sliced chicken sausage to the pan and toss everything together gently.
  • Return the pan to the oven and roast for an additional 15-20 minutes until the vegetables are tender and lightly caramelized.
  • Once cooked, remove from the oven and serve immediately.

Notes

Ensure vegetable pieces are similar in size for even cooking. Don't overcrowd the baking sheet to achieve perfect roasting.
