Preparation

  • Place the chicken breasts in a large pot, cover with water, and bring to a boil. Simmer for 15-20 minutes or until fully cooked. Remove and shred the chicken.
  • In the same pot, add the chicken broth and return to heat. Sprinkle in the taco seasoning and stir well.
  • Add the diced tomatoes, black beans, corn, and shredded chicken to the broth. Stir until well combined.
  • Bring the mixture to a gentle boil. Reduce heat and let it simmer for 15 minutes.

Notes
