Peppers and Filling

  • 1 pound Ground beef or turkey Use turkey for a leaner option that’s still juicy.
  • 1 medium Onion Finely chopped for sweetness and aroma.
  • 2 cloves Garlic Freshly minced for an aromatic kick.

Batter and Frying

  • 3 large Eggs Vital for a fluffy batter.
  • 1 cup All-purpose flour Creates a golden, crispy coat.
  • 2 cups Oil Choose a neutral oil for frying.

Seasonings

  • 1 teaspoon Cumin Infuses the dish with earthy warmth.
  • 1 teaspoon Oregano Use dried for convenience.
  • 1 teaspoon Salt Enhances the filling flavors.
  • 1 teaspoon Pepper Adds a gentle spice.

Sauce

  • 2 cups Homemade or store-bought tomato sauce For added richness.

Instructions
 

Prep the Peppers

  • Preheat the oven to 425°F (220°C). Place poblano peppers on a baking sheet and roast for about 15-20 minutes until the skin is blistered. Remove and let cool.
  • Once cool, carefully peel off the charred skin and make a slit down one side of each pepper to remove seeds.

Prepare the Filling

  • In a skillet over medium heat, sauté chopped onion and minced garlic until soft. Add ground beef or turkey, cooking until browned.
  • Season with cumin, oregano, salt, and pepper. Stir in cheese, allowing it to melt into the meat mixture.

Stuff the Peppers

  • Generously stuff each roasted poblano pepper with the filling, packing it well.

Make the Batter

  • In a bowl, beat the eggs until light and fluffy, then fold in the flour until smooth.

Fry the Peppers

  • Heat oil in a large skillet. Dip each stuffed pepper into the egg batter and place in hot oil.
  • Fry for about 3-4 minutes on each side until golden brown, then drain on paper towels.

Serve with Sauce

  • Warm the tomato sauce in a saucepan and top the plated peppers generously with sauce.
  • Sprinkle additional cheese if desired before serving.

Notes

Consider baking instead of frying for a healthier option. Store leftovers in an airtight container for up to 3 days or freeze for later use.
