Preparation

  • Take the steak out of the refrigerator at least 30 minutes before cooking to allow it to come to room temperature.
  • In a mixing bowl, combine the chipotle powder, minced garlic, chopped guajillo chilies, and olive oil. Whisk until a smooth paste is formed.
  • Rub the marinade over the steak evenly. Marinate for at least 30 minutes; longer for better flavor.
  • Preheat your grill or skillet over medium-high heat. Ensure grill grates are clean and oiled.
  • Cook the steak for about 4-5 minutes on each side for medium-rare, depending on thickness. Avoid flipping too often.
  • Check the internal temperature with a meat thermometer, aiming for 130°F for medium-rare or 140°F for medium.
  • Remove the steak from the heat and allow it to rest for 5-10 minutes.
  • Slice the steak against the grain into thin strips before serving.

Notes

Customize your heat level by adjusting chipotle powder or replacing guajillo chilies. Consider adding lime juice or honey for extra flavor.
