  • 1.5 pounds ground beef (lean) Tender and juicy, this is the star of your dish.
  • 1 large onion (chopped) Aromatic and savory, adds depth to your filling.
  • 2 cups mixed vegetables (peas, carrots, corn) A colorful and nutritious addition.
  • 1 tablespoon olive oil For sautéing, adds richness to the filling.
  • 2 tablespoons tomato paste Thickens the mixture while adding tanginess.
  • 1 cup beef broth (low sodium) Keeps your filling moist and flavorful.

Topping Ingredients

  • 3 cups mashed potatoes (prepared) Creamy and fluffy, perfect for the topping.

Preparation

  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5-7 minutes.
  • Add the ground beef to the skillet and cook until browned, about 8-10 minutes.
  • Stir in the mixed vegetables and cook for an additional 3-5 minutes until tender.
  • Mix in the tomato paste and then add the beef broth, stirring to combine. Let it simmer on low heat for 10 minutes.
  • Preheat your oven to 400°F (200°C). Spread the beef mixture evenly in a baking dish, then top with the mashed potatoes.
  • Bake for approximately 25-30 minutes or until the top is golden brown.
  • Allow to cool for a few minutes before serving. Enjoy!

Notes

For an extra layer of flavor, add a splash of Worcestershire sauce to the beef mixture. To make the topping creamier, mix in sour cream or cream cheese into the mashed potatoes before applying. Leftover mashed potatoes can also be used.
