  • 3 1/2 to 4 cups all-purpose flour (plus more for kneading) Foundational element for soft rolls.
  • 3 tablespoons unsalted butter (melted, for brushing) Gives rolls a glossy sheen.

Preparation

  • In a small bowl, stir the sugar into the warm milk. Sprinkle the yeast on top and let it sit until foamy, about 5 minutes.
  • In the bowl of a stand mixer, combine the foamy yeast mixture, softened butter, egg, salt, and 2 cups of flour. Mix on low speed until smooth.
  • Gradually add the remaining flour, mixing until a soft dough forms. Knead the dough on medium-high speed for 2–3 minutes.
  • Transfer the dough to a greased bowl, cover with a dish towel, and let it rise in a warm place until doubled in size, about 45–60 minutes.
  • Once risen, punch down the dough to release air, and let it rest for 5 minutes. Roll the dough out on a floured surface to form a 12×8' rectangle, about 1/2' thick.
  • Cut the dough into 24–30 even squares and place them on prepared baking sheets, cover them, and let rise again for another 45–60 minutes.
  • Preheat your oven to 350°F (175°C). Bake the rolls for 12–15 minutes or until golden brown. Immediately brush the tops with melted butter.

Notes
