Ice Cream Base

  • 22 oz full-fat cottage cheese 4% for a richer texture
  • 0.333 cup honey Adjust to taste
  • 1 teaspoon vanilla extract Aromatic essence that elevates flavor

  • 1 cup fresh blackberries For mixing into the ice cream
  • 0.333 cup fresh blackberries For layering and garnishing
  • 3 sheets graham cracker Optional, for added crunch
  • 0.5 teaspoon flaky salt Optional, enhances flavors

Instructions
 

Preparation

  • Place the full-fat cottage cheese into a blender or food processor and blend until creamy and silky.
  • Add in the honey and vanilla extract. Blend until fully combined.
  • Rinse the blackberries gently under cold water and pat them dry. Set aside 1 cup for mixing and 0.333 cup for layering.
  • Fold the 1 cup of fresh blackberries into the cottage cheese mixture.
  • Break the graham crackers into small pieces, either crushing them or leaving them in larger chunks.

Freezing

  • In a freezer-safe container, alternate layers of the cottage cheese mixture, graham cracker pieces, and reserved blackberries.
  • Cover with a lid or plastic wrap and freeze for at least 4-6 hours until firm.

Serving

  • Let the ice cream sit at room temperature for about 5 minutes before scooping for easier serving.

Notes

For extra creaminess, consider adding a tablespoon of heavy cream. This recipe can be varied with different fruits or flavorings.
