Preparation

  • Heat the olive oil in a large pot over medium heat, then add the diced yellow onion and sauté for about 5 minutes, until softened.
  • Add the minced garlic and cook for an additional minute.
  • Introduce the diced chicken breasts and cook for about 5-7 minutes until no longer pink.
  • Add the green chiles, ground cumin, and oregano, and simmer for an additional minute.
  • Pour in the chicken broth and bring to a gentle boil, then reduce heat and simmer for 15 minutes.
  • Stir in the white cannellini beans and corn, warming through for 3-5 minutes.
  • Add the softened cream cheese, stirring until completely melted and incorporated.
  • Serve hot, garnished with melted Monterey Jack cheese, sour cream, fresh coriander, and slices of jalapeño.

Notes

For best results, ensure chicken is well-seasoned and cream cheese is softened before adding. Extras like cheese and jalapeños can be prepped for guests.
