Preparation

  • Pat the chicken breasts dry and season both sides with 1.5 tablespoons of Cajun seasoning, salt, and black pepper.
  • Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
  • Add the seasoned chicken breasts and cook for 5-7 minutes on each side until golden brown and cooked through. Set aside.

Cooking the Sauce

  • In the same skillet, melt the remaining tablespoon of butter and sauté the diced onion for 3-4 minutes until softened.
  • Add the minced garlic and cook for an additional minute until fragrant.
  • Pour in the chicken broth to deglaze the pan, scraping up browned bits for added flavor.
  • Bring to a simmer, then stir in the heavy cream and remaining 0.5 tablespoons of Cajun seasoning.
  • Allow to simmer for 2-3 minutes, then stir in the Parmesan cheese until melted and creamy.

Finishing Touches

  • Return the chicken to the skillet, spooning sauce over each breast.
  • Garnish with freshly chopped parsley and serve immediately.

Notes

Serve with fluffy white rice or creamy garlic mashed potatoes. Avoid overcooking the chicken to keep it juicy.
