Preparation

  • In a large skillet, melt the butter over medium heat.
  • Add the finely chopped shallots and minced garlic, sauté for 2–3 minutes until soft and translucent.
  • Stir in the tomato paste and chopped roasted red peppers; cook for another 2 minutes.
  • Pour in the heavy cream and stir until smooth.
  • Gradually add the grated Parmesan cheese, stirring continuously until melted and blended.
  • Add the shrimp to the mixture, cooking for 3–4 minutes until pink and cooked through.
  • Stir in the cooked rice, mixing to coat it evenly with the creamy sauce.
  • Season with salt, pepper, and optional red pepper flakes.
  • Garnish with fresh parsley before serving hot.

Notes

Choose fresh shrimp for the best flavor. Be careful not to overcook the shrimp to avoid a rubbery texture. Prepping ingredients ahead of time will make cooking smoother.
