Main Ingredients

  • 1 lb sirloin steak (thinly sliced against the grain) This tender cut will offer a juicy bite.
  • 1 lb large shrimp (peeled and deveined) Sweet and succulent.
  • 1 red bell pepper (thinly sliced) Provides a sweet and slightly smoky flavor.
  • 1 green bell pepper (thinly sliced) Adds crunch and a hint of bitterness.
  • 1 yellow onion (thinly sliced) Offers warmth and a subtly sweet undertone.
  • 8 large flour tortillas Soft and pliable.
  • 2 cups shredded Monterey Jack cheese Creamy and mild.
  • 2 cups shredded sharp cheddar cheese Provides a tangy zip.
  • 3 tbsp olive oil (divided) Essential for cooking.
  • 2 tbsp butter (for cooking quesadillas) Gives a rich, decadent finish.

Creole Spice Blend

  • 2 tbsp paprika Adds warmth and color.
  • 1 tbsp garlic powder Offers a savory depth.
  • 1 tbsp onion powder Enhances the sweetness of the onion.
  • 2 tsp dried oregano Brings traditional Creole notes.
  • 2 tsp dried thyme Adds a slight minty flavor.
  • 1-2 tsp cayenne pepper (adjust to taste) For the perfect level of heat.
  • 1 tsp salt Enhances all flavors.
  • 1 tsp black pepper Adds mild heat.

Instructions
 

Preparation

  • In a small bowl, combine all the Creole Spice Blend ingredients and mix well.
  • Pat the sliced steak and shrimp dry with paper towels and toss them separately with the spice blend.

Cooking

  • Heat 1.5 tablespoons of olive oil in a large skillet over medium-high heat. Cook the steak for 2-3 minutes per side until browned.
  • Remove the steak and set aside. In the same skillet, add the remaining oil, onions, and bell peppers and cook for 5-7 minutes.
  • Add the shrimp and cook until pink and opaque. Mix in the steak and toss to combine.
  • Wipe the skillet clean and melt butter, place a tortilla in the skillet, add cheese, filling, and more cheese, and fold.
  • Cook for 3-4 minutes per side until golden brown and crispy. Repeat with remaining tortillas.
  • Let the quesadilla rest for a minute before slicing into wedges and serve with toppings.

Notes

Prep Ahead: Cut and season ingredients in advance. Ensure skillet is hot for cooking to achieve a crispy texture. Let the quesadilla rest after cooking for easier slicing.
