  • 4 Green onions Finely chopped, these add a fresh and aromatic crunch.

Instructions
 

Preparation

  • Wash the baby potatoes thoroughly to remove any dirt.
  • Place them in a large pot filled with water and a generous pinch of salt. Bring to a boil over medium heat and cook for about 15 to 20 minutes, or until they are fork-tender.
  • Drain the potatoes in a colander and let them cool slightly.
  • On a baking sheet lined with parchment paper, place the warm potatoes and smash each one using a flat surface until they are smashed but still intact.

Flavoring

  • In a small bowl, combine the gochujang, sesame oil, salt, and pepper. Mix well until you have a smooth paste.
  • Brush or spoon the gochujang mixture over the smashed potatoes, ensuring each one is generously coated.

Baking

  • Preheat your oven to 400°F (200°C).
  • Bake the coated smashed potatoes for about 25-30 minutes, or until they are golden brown and crispy.

Dressing

  • While the potatoes are roasting, mix the mayonnaise (or Greek yogurt) with finely chopped green onions in a large bowl.

Combining and Serving

  • Once the potatoes are crispy, remove them from the oven and let them cool briefly.
  • Gently toss the warm potatoes in the creamy dressing until well coated. Adjust seasoning as needed before serving.

Notes
