Ingredients
  

Main Ingredients

  • 3 lbs beef chuck roast Tender and juicy, the star of the filling.
  • 16 corn tortillas corn tortillas Soft and slightly sweet, perfect for holding the filling.
  • 2 cups Oaxaca or mozzarella cheese, shredded Creamy and melty for rich flavor.

Chiles and Seasonings

  • 5 dried guajillo chiles Mildly spicy, adds deep color.
  • 2 dried ancho chiles Sweet and smoky; adds depth.
  • 1 white onion, halved white onion, halved Aromatic base for the sauce.
  • 5 cloves garlic Essential for robust flavor.

  • 2 tbsp apple cider vinegar Adds brightness and acidity.

  • 2 tbsp vegetable oil For searing the beef.

Garnishes

  • 1/2 cup white onion, finely diced For garnish.

Instructions
 

Preparation

  • Toast the chiles in a dry skillet over medium heat for 30-60 seconds on each side until fragrant. Remove from heat and soak in hot water for about 30 minutes.
  • Transfer chiles to a blender, add onion, garlic, tomatoes, vinegar, oregano, cumin, and cloves, plus 1 cup of soaking liquid. Blend until smooth.
  • Pat beef chuck roast dry, season with salt and pepper, heat oil in a skillet, and sear beef on all sides until browned.

Cooking

  • Place seared beef in the slow cooker, pour blended sauce over, add bay leaves and cinnamon stick, stir to combine, and cook on low for 8-10 hours or high for 4-6 hours.
  • Once beef is tender, shred with forks and reserve the cooking liquid (consommé).

Taco Assembly

  • Heat a skillet, dip a tortilla in reserved fat, cook on one side, add shredded beef and cheese to half, fold, and cook until crispy and cheese melts.
  • Serve hot with consommé for dipping and garnish with diced onion, cilantro, and lime.

Notes
