Ingredients

  • 1 pound boneless, skinless chicken breasts Cut into bite-sized pieces
  • 1 cup chopped yellow onion
  • 1 cup matchstick carrots
  • 1 cup diced celery
  • 4 cloves minced garlic
  • 32 ounces chicken stock Use low-sodium if desired
  • 1 tablespoon fresh thyme Or 1 teaspoon of dried thyme
  • 2 teaspoons freshly cracked black pepper Adjust salt to taste
  • 2 tablespoons cornstarch To thicken the soup
  • 12 ounces evaporated milk

For the Dumplings

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon freshly cracked black pepper
  • 1 tablespoon fresh thyme
  • 0.75 cup whole milk
  • 4 tablespoons melted butter

Instructions
 

Preparation

  • Begin by cutting the chicken into bite-sized pieces.
  • Chop the onion, slice the carrots, and dice the celery.

Add Ingredients to the Crockpot

  • In your slow cooker, combine the chicken, chopped onion, carrots, celery, and minced garlic.
  • Pour in the chicken stock.

Season the Broth

  • Season the mixture with thyme, black pepper, and salt to taste.
  • Stir the ingredients together.

Cook the Chicken

  • Set your crockpot to low and let the mixture simmer for about 6-7 hours.

Thicken the Soup

  • In the last 30 minutes of cooking, mix cornstarch with water to create a slurry and stir it into the pot along with the evaporated milk.

Prepare the Dumplings

  • In a bowl, whisk together flour, baking powder, salt, and pepper.
  • In another bowl, mix thyme, milk, and melted butter, then combine with the dry ingredients.

Add Dumplings to the Soup

  • Drop spoonfuls of the dumpling batter over the chicken mixture.
  • Cover and cook on high for an additional 30 minutes.

Finish the Dish

  • Once the dumplings are fluffy, stir gently to combine them with the chicken and broth. Serve hot.

Notes

For extra flavor, add lemon juice before serving. You can use other vegetables like peas or corn, and herbs such as rosemary or parsley for variations. For a spicier kick, consider adding red pepper flakes or jalapeƱos.
