Instructions
 

Preparation

  • Chop all your vegetables and cut the chicken into bite-sized pieces.
  • In a large bowl, mix together the chicken, sliced andouille sausage, chopped celery, bell peppers, and onion.
  • Add the minced garlic, creole seasoning, oregano, thyme, cayenne pepper, salt, and pepper, and toss to coat.
  • Transfer the mixture to your crockpot, pour in the crushed tomatoes and chicken broth, and stir gently.
  • Place the lid on the crockpot and set it to cook on low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, add the thawed shrimp, gently stirring them in.
  • Once cooked, integrate the cooked rice into the crockpot just before serving.
  • Serve hot, garnished with fresh chopped parsley if desired.

Notes

Avoid overcooking the rice; it’s best to cook it separately and add it at the end. Experiment with the spices according to your taste for more heat.
