  • Start by preparing your ingredients: dice the onion and mince the garlic.
  • In your crockpot, layer the bottom with the diced onions and minced garlic.
  • Place the boneless, skinless chicken breasts on top of the onions and garlic. Season with salt, pepper, and paprika.
  • Pour the entire jar of alfredo sauce over the chicken, followed by the heavy cream. Stir gently.
  • Add the Italian seasoning and sun-dried tomatoes, mixing delicately.
  • Cover the crockpot and set to your preferred cooking mode—high for 4 hours or low for 6 to 7 hours.
  • About 30 minutes before serving, cook the rotini pasta according to package instructions until al dente.
  • Once the chicken is tender, shred it using two forks and mix in fresh baby spinach to wilt in the warm sauce.
  • Finally, mix in the cooked rotini pasta until all noodles are well-coated in the sauce.
  • Serve hot, garnished with fresh basil leaves.

Notes

For best results, ensure that chicken is well-coated in the sauce before cooking. Use thawed chicken for even cooking, and add ingredients in the right order to prevent sticking. A light salad and garlic bread pair well with this meal.
