Preparation

  • Begin by boiling a large pot of salted water. Once it reaches a rolling boil, add the pasta and cook according to package instructions until al dente, typically around 8-10 minutes. Reserve a cup of pasta water and drain the rest. Set aside.
  • In a large skillet, heat the extra virgin olive oil over medium-high heat. Season the chicken with salt and pepper. Add to the skillet and cook for about 6-7 minutes on each side or until golden brown and cooked through. The internal temperature should reach 165°F (75°C). Remove from the skillet and let it rest.
  • In the same skillet, reduce the heat to medium and add the chopped garlic. Sauté for about 30 seconds until fragrant, being careful not to let it burn.
  • Add the halved cherry tomatoes to the skillet and cook for about 4-5 minutes, stirring occasionally until softened and juicy.
  • Slice the rested chicken into bite-sized pieces. Add the cooked pasta, tossing everything together with the reserved pasta water to help the sauce cling.
  • Remove from heat, toss in fresh basil leaves, and serve immediately topped with grated Parmesan cheese.

Notes

For added flavor, consider marinating the chicken in olive oil, garlic, and herbs for at least 30 minutes before cooking. Feel free to mix in other vegetables like spinach or zucchini.
