  • 24 oz cod fillets, Cut into four 6 oz portions, at least 1.5 inches thick Use the freshest cod fillets for the best texture and flavor.
  • 13.5 oz full-fat coconut milk One standard 400ml can for a creamy base.
  • 3 tbsp yellow curry paste Choose premium quality for best flavor.
  • 1 tsp ground turmeric Enhances color and aroma.
  • 1 tbsp fish sauce Adds depth of flavor.
  • 1 tbsp light brown sugar Balancing sweetness.
  • 1 tbsp virgin coconut oil For activating the curry paste.
  • 1 cup fresh watercress For garnish.
  • 2 tbsp infused chili oil For an extra kick and garnish.

Instructions
 

Preparation

  • Heat the virgin coconut oil in a large skillet over medium heat.
  • Add the yellow curry paste and sauté for about 2-3 minutes until fragrant.
  • Pour in the coconut milk and one cup of fresh water, stirring well.
  • Stir in ground turmeric, fish sauce, and light brown sugar, and bring to a gentle simmer.

Cooking

  • Carefully add the cod fillets to the skillet, ensuring they are submerged.
  • Cover the skillet and poach the fish for about 8-10 minutes until cooked through.

Serving

  • Remove from heat, plate the cod, and spoon yellow curry sauce over it.
  • Garnish with fresh watercress sprigs and drizzle with infused chili oil.

Notes

Serve over jasmine rice or with naan. Adjust seasoning to taste and avoid overcooking the cod to maintain its texture.
