Ingredients
  

For the marination

  • 1 lb chicken breast tips or tenderloins, cut into bite-sized pieces
  • 1 cup buttermilk, creamy and tangy Marinate for at least 30 minutes, up to 12 hours for best results.

For the coating

  • 1 cup all-purpose flour, perfect for coating
  • 1 tsp paprika, aromatic and slightly smoky
  • 1 tsp garlic powder, rich in flavor
  • 1 tsp kosher salt, to enhance the taste
  • 0.5 tsp black pepper, for a hint of heat

For frying

  • 2 cups vegetable oil, ideal for frying Heat oil to around 350°F (175°C).

Preparation

  • Place chicken pieces in a bowl and pour buttermilk over them, ensuring each piece is well coated. Marinate for at least 30 minutes.
  • In a separate bowl, combine flour, paprika, garlic powder, kosher salt, and black pepper. Mix thoroughly.

Frying

  • Heat vegetable oil in a frying pan over medium-high heat.
  • Remove the chicken from buttermilk, letting excess liquid drip off. Dredge each piece in the flour mixture, ensuring it is fully coated.
  • Once oil is ready, gently place the coated chicken pieces into the hot oil, being careful not to overcrowd the pan.
  • Fry for about 6-8 minutes until golden brown and crispy, and check with a thermometer that the internal temperature reaches 165°F (74°C).
  • Remove the fried chicken and place on a plate lined with paper towels to absorb excess oil before serving.

Notes

Serve with classic sides like coleslaw, corn on the cob, or fries. Avoid overcrowding the pan for even frying.
