Preparation

  • Start by ensuring your salmon fillet is fresh and skinless. Cut it into small, bite-sized cubes and set them aside.
  • In a bowl, mix the all-purpose flour, cornstarch, salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper (if using).
  • In another bowl, whisk together the egg and buttermilk.
  • Dip each salmon cube into the coating mixture, then into the wet batter, and finally roll it in the panko breadcrumbs.
  • In a skillet or deep frying pan, heat enough vegetable oil over medium-high heat.

Cooking

  • Carefully drop the coated salmon cubes into the hot oil, leaving enough space between them.
  • Fry until golden brown, about 4-5 minutes per side.
  • Use a slotted spoon to remove the salmon bites from the oil and transfer to a plate lined with paper towels to drain excess oil.
