Preparation

  • Cut the chicken thighs into bite-sized pieces and gather the cornstarch, salt, and other components.
  • In a bowl, toss the chicken pieces with cornstarch and salt, ensuring they’re well coated.

Cooking

  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Once the oil shimmers, carefully add the chicken pieces in a single layer and sear for about 4-5 minutes on each side until golden brown and slightly crispy.
  • Remove the chicken from the skillet and set it aside.
  • In the same skillet, add the gochujang paste, soy sauce, honey, rice vinegar, minced garlic, grated ginger, and water.
  • Stir to combine, bringing the mixture to a gentle simmer and let it cook for about 2 minutes until it thickens slightly.
  • Return the chicken to the skillet, tossing it in the sauce to coat thoroughly and continue cooking for another 3-4 minutes until the chicken is glazed and heated through.

Serving

  • Serve the Gochujang Chicken over a bed of fluffy steamed rice.
  • Garnish with toasted sesame seeds and sliced scallions.

Notes

Ensure pieces are uniform in size, and avoid overcrowding the pan for perfect sear. Can use skinless chicken breasts for a leaner option or tofu/seitan for a vegetarian variation.
