Marinade Preparation

  • In a mixing bowl, combine Greek yogurt, minced garlic, lemon juice, olive oil, salt, and black pepper. Whisk until smooth.
  • Add the chicken breasts to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 1 hour, or overnight for maximum flavor.

Vegetable Preparation

  • While the chicken is marinating, chop your mixed vegetables into bite-sized pieces.

Chicken Cooking

  • Heat a grill or skillet over medium-high heat.
  • Remove the chicken from the marinade and place it on the hot grill. Cook for 6-7 minutes on each side, until the chicken reaches an internal temperature of 165°F (75°C) and is nicely grilled with char marks.

Sauce Preparation

  • While the chicken cooks, prepare the sauce. In a bowl, combine tahini paste, crumbled feta cheese, lemon juice, minced garlic, and a pinch of salt.
  • Gradually add water, stirring until you achieve a smooth and pourable consistency. Adjust seasoning as needed.

  • Once the chicken is cooked, let it rest for a few minutes before slicing.
  • In serving bowls, layer the mixed vegetables and top with the sliced chicken.
  • Drizzle with tahini feta sauce and finish with fresh herbs for garnish.

Notes

For added depth of flavor, consider marinating the chicken overnight. Short on time? You can grill or pan-sear the chicken directly without marinating; just season with salt, pepper, and garlic for quick flavor. Feel free to experiment with other vegetables, like cherry tomatoes or carrots.
